Pairing local wines with locally grown foods from the same region has been taking place for centuries. In the past, local foods were paired with local wines because that’s what the region produced and there was no knowledge of other wines and foods from different areas. People prepared their foods and wines to pair well with what was on the table and available.
As regional dishes and wine evolved together, their flavors became more complementary through different cooking or winemaking techniques. The characteristics of both the wine and the food accentuate the flavors of the other creating a truly magnificent dish. Simply put, we’ve had a lot of time and a lot of practice producing really great wine and food matches. Here is a recipe for one of our favorites.
Mushroom Sauce for Bison Steaks
Slow-cooked in a blend of rich flavors, the mushrooms in this classic sauce stay tender, juicy, and delicious.
Ingredients
- 2 tbsp. butter
- 1 (15 oz.) package fresh mushrooms, sliced
- 1 clove of fresh garlic, minced
- 1 tbsp. all-purpose flour
- ½ cup water
- ½ cup white wine (optional)
- 1 tsp. Worcestershire sauce
- Salt and pepper to taste
Directions
- Melt butter in sauce pan. Add mushrooms and garlic. Stir to prevent sticking. Cook mushrooms, about 5 minutes. Reduce heat to low.
- Sprinkle mushroom mixture with flour. Stir well to incorporate so that all the flour is absorbed. Add water, white wine, and Worcestershire sauce to the skillet. Stir well to incorporate mushroom mixture with the additional liquids to make the sauce.
- Season to taste with salt and pepper.
- This is a great topping for bison steaks!
